Rob and Lucy Wood’s @spoutwoodfarm Faerie Festival had brought smiles to so many children’s faces bringing a world of imagination alive all in the while promoting an eco friendly zero waste life! Now with all endings as you know come new beginnings so here it is : This new Summer Solstice festival has emerged. Big Fat Daddy's Famous Pit Beef

Big Fat Daddy's famous pit beef goes through a five step process before it hits your tummy.  Wayne is careful in his meat selection. Although many articles are written that we use top round, indeed we do not.  Our special selection of meat is cut into small quadrants (always the same way for years) and marinated several days in our famous dry rub seasoning.

Our seasoning is all natural and made in small batch quantities, fresh spices which contains no anti-caking agents.  Dry rubbing keeps the flavor in.   The pieces are then refrigerated for safe keeping.

They are braised and cook over high heat, general a fire box or barrel smoker, using wood. More keys are that wood is used to add the smokey taste, never a smokey additive or seasoning.  Wayne currently uses oak and apple, peach and some others.

The flavorful hunks are turned constantly over high heat, searing the outside making a nice "bark" yet sealing in the flavor. The insides are medium rare to rare.

The next step is the resting process where the meat is resting in order to retain the medium rare on the inside and well done on the outside.  This we have implemented highest quality standards to ensure all HACCP procedures are being met, before we slice it paper thin.

At the festival  you will see it going on the grill medium rare, but doesn't take long to hit well done.  It doesn't matter, the meat is so flavorful you will enjoy it on our subs including having it cheesesteak style with yummy peppers and onions.

Big Fat Daddy's has joined the York Pennsylvania Convention and Visitor's Bureau.  But that's not all.  The secret is out, we are a 2015 Visit York Pennsylvania Factory Tour Stop!  Many people do not realize Pennsylvania is the Factory Tour Capital of the World, housing old businesses and highlighting industry. We are one of the rare Mom and Pop tour stops which highlights grilling and barbecue!   As you may or may not know, Big Fat Daddy's roots are strong in Baltimore, but after three decades in Maryland we made the move to PA several years ago!

The 3000 square foot compound used to be home to a construction company and land developer.


We now call this "The Compound", a 3000 sq foot 3 Acre compound in the cornfields of Northern York, Pennsylvania. Herein is our licensed kitchen facility,  event warehouses, Pitmaster Playground, and office space.   It's where Wayne plays hard and works hard. For the tour, we've also been working our grilling museum, which will incorporate vintage meat history,  antiques, and education on rubs, woods, and smoking.

The BASIC TOUR is by appointment only and lasts up to 30 minutes, for $5 per person you get:

  • A tour of the Wall of Fame and Big Fat Daddy's history. Many of these articles, awards and trophies have been off limit to the public, until now.
  • A complete tour of the facility to see where it all takes place, to see a real "Pitmaster's Playground."
  • A tour of the little "Grilling Museum" which includes information and Wayne's collection of Vintage Goodies, mainly on the history of meat packing industry from Swift & Company to spices and dry rubs with C.F. Sauer--for this education part of the tour, chances are you will learn a little something!
  • All Tourists over the age of 10 will receive a free spice sample from our partners C.F.Sauer to take home and enjoy!  They will also receive recipes and coupons.
  • You can also purchase the tours as gifts on Etsy here.
 The cost to all is $5.00 per person for the basic tour.  Stipulations: 10 and under are free and all children must be accompanied by an adult.   ***All proceeds of the basic tour will be donated to Bell Family Shelter at the end of the year.

  • More in depth information on dry rubbing and injection methods for meats.
  • All tourists will receive a free spice sample from our partners C.F.Sauer to take home and enjoy!  They will also receive recipes and coupons.
  • A $10 coupon off a future Pitmaster Class.

These tours last about an hour, and are by strict appointment only. They are $25 per person, of which ***$5 from each tourist will be donated to Bell Family Shelter at the end of the year.  VIP Tours may take place seven days a week in the off season, but most of these tours will take place on weekdays in the Summer due to Wayne's hectic schedule of having to do fairs and festivals on weekends.

We primarily do backyard bbq style catering, and offers many options.  For most parties we offer the all you can eat buffet, which most caterers don't do. Believe it or not, more and more people want to have the all-you-can-eat backyard barbecue at weddings!  We also do a lot of corporate catering during the weekdays!

Big Fat Daddy's spent thirty years in Baltimore, and moved operations to York , PA but still service Maryland, Baltimore, Virginia and Pennsylvania as long as the date you request is available and that you have close to 100 people.

York Mother's Day Food Bell Socialization

Every year Big Fat Daddy's gets our friends and family together to donate our time and hard work to raising money for Bell Socialization Services of York, PA.  at the Old York Street Fair which is held in the center of York City, Pennsylvania on Mother's Day from 10-5! Bring your mom and visit our stands which are located in the Market Street Square!   Every purchase you make at our stands helps support Bell Socialization Services, Inc which is home to Bell Family Shelter.

If you are not familiar with them, they EMPOWER people to obtain the support and guidance they need to make positive changes in their life.

Case in point, we have a friend who left her abusive husband, with their two kids, and only the clothes on their backs.  No job, no money, no nothing, but she left in fear for their lives.  Bell opened their doors of the shelter and helped them have a place to stay for awhile with clothing, food, and shelter.  That same person is now in her own apartment, having custody of her two kids, and working as a Chef. To this day, she receives no monetary support from her ex.   We give her a lot of credit for taking the steps to leave, but wonder how many people don't have a place to go to?

This is why it's so important to keep places like Bell funded with contributions and why they are on our list of top charities.   Bell really does a lot for people who may be having a rough time, need some guidance or some shelter to get back on their feet.  We can't tell you how many people they have helped over the years. 

Please come visit us in the Square of York and George Streets and eat at any BFD stand as all helps Bell.   Try our Texas Beef, fresh squeezed lemonade, smoothies, funnel cakes, deep fried Oreos, healthier choice Gyros or Sausage.  It's all good and rest assured knowing your purchase goes to a good cause.

Southern Style Red Beans -n- Rice with Collard Greens

Warning: For lovers of hot things only.

Wayne M. Schafer used to work in a five star restaurant in Baltimore's Little Italy. Now he's making a name for himself with his Texas Style, Southern Style, and BBQ cuisine.  This recipe is not for the mild at heart, but for those who like it hot, with some "heated" power, as Emeril would say.

RECIPE: Feeds four to six depending on if using as a side or as a full sized meal.

YOU WILL NEED:  large stock pot, cutting board, knife, tongs, thermometer, wooden spoon, and the following.... 


INGREDIENTS:
1 bag red kidney beans
1 can of "seasoned" collard greens
1-2 lbs of hot sausage (links or rope, we like the original Ferrante Brothers of Baltimore, now owned by Hatfield)
2-3 cups of Rice  (we used white, but prefer whole grain)
1 Large Can Diced or Stewed Tomatoes
Few tablespoons sugar
Hot Sauce to preference (we like it a wee hot, so 1/4 bottle will do), or,  saute' down and add your own hot peppers (1/2 green bell and 1 small hot chile' pepper!)
Salt, Pepper

Pre-Cooking tip: It is suggested to soak your kidney beans overnight, but we didn't so this recipe takes about 1.5 hours, while entertaining your guests your kitchen will be smelling divine.

Fill a large sized stockpot half way with water.  Toss in sausage and boil with your unsoaked beans (if you soaked them overnight add them at 30 minutes in*)  The sausage will finish prior to the beans. remove when sausage is temping at 190 degrees and bursting open. Place on cutting board with tongs and prepare to cut into small wedges.  We like bite size 1/2 nubs. The idea is to let the juices from the sausage flavor your water and your beans, so after you cut them, dump them back in. Time: 30 minutes in* 

Let the beans ride another 30 minutes if you did not soak them. If you did, cut this time to 20 minutes. Now, add in your can of tomatoes, hot sauce, and a few tablespoons of sugar.  Stir well to dissolve sugar completely.  Your goal is to check the beans every 10 minutes or so, for significant amount of tenderness, but chances are you've lost a fair amount of water to the boil, so refill up the pot to half way with warm water.  Once you again reach boiling temperature, you are now between 1 hour , and 1 hour 15 minutes in. 

After your water starts to boil again, it's time to add the rice, stirring often with your wooden spoon. While the rice is still hard, add your canned collard greens, stirring in the juices.  Your beans and rice should tenderize around the same time, and your base will go from watery to firm, at about 1 hour 35 to 45 minutes in.   Remove from stove.  Salt, pepper, or adjust hot sauce to taste and serve while hot.

TIP: Refrigerate after use in smaller portions to ensure proper cooling temperatures.
NOTE: Use leftovers within 3-4 days due to collard greens!
