BBQ Pitmasters On Location

BBQ Pitmasters

So in Salisbury this past weekend they were filming for the BBQ Pitmasters third season.  On Friday, it was quiet on the set.

Saturday I had some slow down time and was able to wander over to see old Myron in action!  They had the area roped off but it was open to the public. You could watch them in action if you wanted, from about 30' away.

Truth be told I found the set pretty cool, in front of these tents they had all kinds of BBQ spices, props, grills, etc just about heaven for the grilling man.  I love the smoker here:


Although it seemed they were in their own competition for the Season Three series, this competition had nothing to do with the actual KCBS competition that was happening in the attached lot. It's hard to see with the entourage (above), but if you look closely you'll see Myron Mixon discussing some BBQ (below) to Tuffy Stone et al.  I imagine this is what he was saying:

They had him shielded with black drapes as it was pretty sunny out, but you couldn't miss his white hair.   Later in the day the Pitmaster crew film guys stopped over to film some of my ribs cooking on the pit.  They had me sprinkling some spice on top. Wonder if that will make the show or the cutting room floor.  Guess you'll have to watch next season to find out.

What we went for was a BIG AZZ Pig, he is hot pink and measures a bit over 10" wide across your back. Grilling Tips: Write Down Your Recipe

Many of us toss something grand together and mean to write it down. What if you can't remember where you wrote it and want to find it later?

An easy solution to that is to post your recipe to the internet and have it in safe keeping. There are many places you can share you grilled recipes (or non grilled recipes) for that matter.  Many of us share our own recipes on our blogs or websites. What about if you want to share them to other people's websites for safe keeping down the road?  Here are a few suggestions.

Sweet Apple Wood Spare Ribs Recipe for Perfection

My friend Don in Baltimore (shout out to Artist DoLoBo) told me he chopped down his apple tree. (Actually, it fell on his house.)  So all spring he's been chopping me apple wood ! I decided perfect for use in my smoker and do some Apple Wood ribs.

Here's what I did:

  • Marinated full size pork spare ribs for 24-48 hours with dry rub seasoning (coating both sides).
  • Filled a foil pan with 3.5 cups of Apple Juice. 
  • Filled my pit with apple wood.
  • Put the ribs in the foil pan and cooked them low and slow, about 225 degrees for five and a half hours adding more wood as needed and turning them changing positions into the mixture of apple juice.  Some of the juice will evaporate, but that's what you want, more apple flavor. Apple wood +Apple juice = Apple Heaven.

Now when I say smoking, I use a barrel smoker and the smoke flavor is what you want in your meat--gives it that mesquite flavor from the apple wood. So if you are using a large piped smoker, make sure your vents are adjusted or at half closed.

My ribs were very photogenic.
  • At the five and a half hour mark I caramelized them by taking the pan away for good, and searing each right on the grate over top the sweet apple wood with lid open. 
  •  During this step, I was finishing my rips with a maple powder and sugar blend on both sides until the ribs were browned, cooking about 25 minutes more on each side, or until done.  *If you don't have access to maple powder, cheat and use maple syrup but this will burn the outside a bit. 

 These were full size spare ribs, but because they were so tender from smoking for so long, I was able to easily cut the rib tips off and save those for another meal.  (Under normal circumstances, you would need a machete to do this, but not if you cook low and slow, the bones turn into budda!!)

BBQ Pitmasters Filming in Maryland


BBQ Pitmasters are coming.

Here is the announcement from the Wicomico Tourism Email Blast:

"The most popular show ever to portray the world of competitive barbeque, BBQ Pitmasters is coming to Wicomico Recreation, Parks & Tourism's 9th Annual Pork in the Park BBQ Festival. The third season of BBQ Pitmasters, premieres on the recently announced Destination America on Sunday, June 3 at 9pm E/P, but filming begins this spring - making Pork in the Park, the East Coast's largest Kansas City Barbeque Society (KCBS) Competition a perfect stop for the series."

"BBQ Pitmasters will be on-site throughout the festival, which runs from Friday, April 20th through Sunday, April 22nd. The show will film on an open set, meaning that the public is welcomed to watch as three BBQ teams face-off through a series of challenges to reveal the winning team."


What on earth are you guys waiting for?

Get your rear ends down to Pork in the Park and make sure you watch the filming, enjoy the competetion , and grab lunch and dinner at my barbecue vendor stand!

Sweet Potato Recipes and Healthy Eats

You say potato. I say sweet potatoes.  I love them, in fact, they are a healthy sweet alternative to regular old whites or yellows anytime!  They add spunk in your trunk!  I mean it. I can do them in french fry form, in cakes and pies,  mashed up with cinnamon and butter, in sweet potato salad, or on side of my pork (see below).  I nabbed a lot of great recipes from Derrick over at  Sweet Potato Purple Potato website.  He's got a bazillion sweet potato recipes and even one of his all time favorites--Butternut and Sweet Potato Whole Wheat Lasagna!

Bottom line, is sweet potatoes are good for you and Derrick loves them more than I do! His website is loaded with great recipes and lots of information on sweets and purple potatoes! I mean do you even know what a purple potato is? If not you better get over there now and find out!
